[Ingredients]

・ Nagaimo(Japanese yam)
・ Okonomiyaki flour
・ Eggs
※  Water
・ Cabbage
・ Pickled ginger
・ Tempura flakes
※ Oil
・ Okonomiyaki sauce
・ Mayonnaise
・ Dried bonito flakes
・ Aonori

[Tips]
👉If you don't have a grater, cut the yam into small pieces and put it into a plastic bag. Smash the bag using a rolling pin, until the yam becomes a paste. (Be careful not to rip the bag.) This technique also protects your fingers from being cut by the grater.

👉Mixing the cabbage and batter in advance will make the okonomiyaki soggy. We recommend mixing just before baking. Mix one serving at a time for the best results.

👉 Mix the dough swiftly, folding from the bottom. Over mixing the batter will cause it to become sticky and lose its fluffy texture.

【1 Combining 5 minutes】

Wash, peel, and grate yam. Combine okonomiyaki flour, eggs, grated yam, and 125ml water (250ml for 4 servings) into bowl to make batter.

【2 Cutting 2 minutes】

Wash and finely chop cabbage.

【3 Combining 2 minutes】

Combine cabbage, pickled ginger, and tempura flakes into batter from step【1】. Mix batter while folding in air, using a mixing tool.

👉Stir the batter evenly, making sure not to overmix.

【4 Frying 3-5 minutes】

Grease the frying pan and pour in 1/2 batter (1/4 for 4 servings) (1 portion) from step【3】. Place 1/2 bacon (1/4 for 4 servings) (1 portion) on top of batter and lightly push down.

👉Each okonomiyaki should roughly be about 5 inch in diameter and 2/3 inch thick.

【5 Frying 3~4 minutes】

When edges brown, flip over using a turner. Cook for 2-3 minutes. Flip over again and cook for 1 minute.

👉To keep fluffy texture, don't press down on okonomiyaki after flipping it over.

【6 Plating 3 minutes】

Place the finished okonomiyaki onto a plate. Use okonomiyaki sauce, mayonnaise, bonito flakes, and aonori as you like. Repeat to make another portion. (For 4 servings, make 3 more)
