【1 Combining 5 minutes】Wash, peel, and grate yam. Combine okonomiyaki flour, eggs, grated yam, and 125ml water (250ml for 4 servings） into bowl to make batter.
【2 Cutting 2 minutes】Wash and finely chop cabbage.
【3 Combining 2 minutes】Combine cabbage, pickled ginger, and tempura flakes into batter from step【1】. Mix batter while folding in air, using a mixing tool.
👉Stir the batter evenly, making sure not to overmix.
【4 Frying 3-5 minutes】Grease the frying pan and pour in 1/2 batter (1/4 for 4 servings) (1 portion) from step【3】. Place 1/2 bacon (1/4 for 4 servings) (1 portion) on top of batter and lightly push down.
👉Each okonomiyaki should roughly be about 5 inch in diameter and 2/3 inch thick.
【5 Frying 3～4 minutes】When edges brown, flip over using a turner. Cook for 2-3 minutes. Flip over again and cook for 1 minute.
👉To keep fluffy texture, don't press down on okonomiyaki after flipping it over.
