【1 Preparation 5 minutes】Rinse and cook 1 cup of rice（2 cups for 4 servings）. Cut onion【A】 into thin slices. Without washing, cut ends off of shimeji mushroms and pull apart with hands. Finely chop onion【B】. Without washing, cut mushrooms into thin slices.
【2 Stir frying 5 minutes】Add Butter【A】 in a small pan and melt. Add onion【A】in the same pan and stir fry until tender. Add shimeji mushrooms and stir fry until cooked. Add TOJ special demi-glace sauce and 60ml water（120ml for 4 servings）. Simmer down on low heat.
【3 Stir frying 5 minutes 】Add butter【B】 in a frying pan and melt on medium heat, add onion【B】in same pan and stir fry until onion becomes translucent. Add mushrooms and stir fry until cooked.
【4 Stir frying 5 minutes】Add 300g of cooked rice (2 portions) （4 portions for 4 servings）and chicken bouillon into pan from step【3】, stir fry on medium heat. Serve half of the mixed rice on 2 plates. （4 plates for 4 servings）
【5 Frying 5 minutes 】Clean the frying pan and add 1/2 butter【C】（1/4 for 4 servings） to melt on medium heat. Mix 2 cracked eggs【C】 (for 1 serving) and 1/2 pack of mayonnaise in a bowl. Pour 2/3 of beaten egg mixture into the frying pan and stir with a circular motion. When edges brown, pour remaining 1/3 of beaten egg, and cook over medium heat until it becomes half cooked.
