[Tips]
👉Mixing the eggs with a few circular motions will keep its chewy and fluffy texture. Over beating eggs will cause it to lose its texture.
👉When adding eggs to the pan, make sure that the mixture inside is boiling. This will keep the original color of the eggs.
👉To keep eggs soft-boiled, add half of the beaten eggs at a time.

【1 Preparation 5 minutes 】
Rinse and cook 2 cups of rice(3 cups for 4 servings). Cut onions into thin slices. Wash, cut off roots, and thinly slice green onions. Cut chicken into bite size pieces.
【2 Mixing 3 minutes】
Add eggs to a bowl and mix.
【3 Simmering 5 minutes】
To frying pan, add 120ml of water(240ml for 4 servings) and bring to a boil on medium heat. Once boiling, add chicken and bring back to a boil. Remove lye.
【4 Simmering 3 minutes】
Add onions, Japanese seasoning mixture, and 1 tablespoon of mirin(2 tablespoons for 4 servings) to【3】. Simmer until cooked (about 2 minutes) . Add green onions and bring back to a boil.
【5 Simmering 3 minutes】
Add half of beaten eggs from step【2】 to pan from step【4】, evenly spreading egg throughout pan. Cover the pan with a lid and simmer 40 seconds. Add the rest of the eggs from step 【2】evenly on top. Uncovered, wait about one minute until egg whites are no longer transparent.
【6 Plating 2 minutes 】
Add rice into a bowl and serve【5】on top. Add Japanese pepper powder to taste.(※The recommended amount of rice per person is 200g.)
