[Tips]
👉To center the yolk in a boiled egg, slowly rotate the egg with chopsticks or a similar tool for the first two minutes of boiling. This prevents the yolk from settling on one side and helps it stay centered.
👉 The cooking time for boiled eggs varies depending on the type of pot used, but as a general guideline for eggs taken directly from the refrigerator: for a runny yolk, boil for 6-7 minutes; for a soft-boiled egg, boil for 7-9 minutes; and for a hard-boiled egg, boil for 10-11 minutes.
👉Quickly transfer boiled noodles to a colander, rinse with water to cool down, then wash thoroughly under running water for even better taste.

【1 Boiling Eggs 10 minutes】
Boil enough water in a pot to fully submerge eggs. Place eggs, straight from refrigerator, onto ladle and gently slide them into boiling water. Keep water at gentle boil and cook eggs over medium heat for about 7 minutes. Once done, transfer eggs to cold water to cool.👉 Eggs straight from the refrigerator are prone to cracking when placed in boiling water, so use a ladle to gently lower them into the pot.

【2 Preparation 2 minutes】
In bowl, add Tantan soup mix. Gradually add 300ml of soy milk (600ml for 4 servings), stirring well to dissolve completely. Add 150ml of water (300ml for 4 servings) and mix thoroughly. Place mixed soup in refrigerator to chill.👉 Be sure to mix well to avoid any lumps in the soup.
【3 Preparation 3 minutes】
Trim ends of cucumber and slice thinly at 3mm diagonal angle. Stack slices slightly offset and cut them into thin strips about 3mm wide. Cut green onion in half lengthwise, and then slice it thinly at 1-2mm diagonal angle with flat side down. Mince pickled mustard greens. Mince ginger. Peel boiled eggs that were cooled in step 【1】.【4 Making Meat Miso 5 minutes】
【5 minutes】Without adding oil, place ground pork in frying pan and cook over medium heat. When meat begins to change color, add toban djyan and stir-fry. Add minced pickled mustard greens from step 【3】 and meat miso mix. Continue to stir-fry until meat absorbs liquids.
👉 There's no need for oil as the ground pork releases its own juices.
👉 If you're not a fan of spicy food, you can skip the toban djyan and use the meat miso mix to season the meat instead.
【For ground chicken】
Add about 1/2 tablespoon of oil to frying pan and cook over medium heat, break up ground chicken as it cooks. When meat begins to change color, add toban djyan and stir-fry. Add minced pickled mustard greens from step 【3】 and meat miso mix. Continue to stir-fry until meat has absorbed liquids.
👉Using sesame oil is recommended as it adds a rich flavor.
【5 Boil the Somen Noodles 8 minutes】
Bring 2 liters of water (4 liters for 4 servings) to boil in large pot. Scatter somen noodles into water, boil them on high heat for about 2 minutes. When water starts to boil, adjust heat to prevent it from boiling over. Once noodles are cooked transfer them to strainer. Thoroughly rinse under running water to remove sliminess, then drain water.👉 Be careful not to burn yourself; watch out for hot water and boiling over.
👉 Quickly transfer the boiled noodles to a strainer, rinse them with water to cool them down, and then wash them thoroughly under running water for an even better taste.
