👉Grilled green onions become sweeter, enhancing their deliciousness.
👉Wait for udon noodles to loosen on their own, forcing them apart while boiling will cause them to break.
👉Drain the water from the Udon noodles thoroughly, so the excess water won't cause the curry to become thin and watery.

【1 Preparation 7 minutes】
Put fried tofu in strainer and pour boiling water over to remove excess oil. Let sit until cool, then squeeze out water and cut into slices about 1-2cm wide. Cut whites part of green onions into 4-5cm pieces and chop green parts into small pieces. Cut onions along fiber into about 1cm pieces. Cut chicken into bite-sized pieces. (For pork, cut into lengths of about 3cm.) Dissolve potato starch in 2 tablespoons (4 tablespoons for 4 servings) of water. Prepare 600ml of water (1200ml for 4 servings).👉 Be careful when removing excess oil as boiling water is used, to avoid burns.
👉 The water prepared here will be used in step 【4】.
【2 Frying 2 minutes】
Heat sesame oil in frying pan over medium heat. Place long sliced green onions (4-5cm pieces) and fried tofu in pan without overlapping. Once the first side is lightly browned, flip over and lightly brown the other side. Then, transfer to a plate. Pour plenty of water into a separate pot and bring it to a boil in advance to use later for boiling the udon noodles.👉Do not boil the udon noodles at this point, as they will be boiled in step 【5】.
【3 Stir-frying 8 minutes】
【For Chicken】In same frying pan used previously, add chicken from step 1 and stir-fry. When the surface of chicken changes color, add onion and stir-fry for about 3 minutes until it is 70-80% cooked, while breaking it apart. Add hidden ingredient and stir-fry for about 30 seconds to coat everything evenly. Add curry powder mix and stir-fry for another 2 minutes, ensuring everything is well coated.
【For Pork】
In same frying pan, spread out pork from step 1. Once surface starts to lightly brown, flip them over. Add onion and stir-fry for about 3 minutes until it is 70-80% cooked, while breaking it apart. Add hidden ingredient and stir-fry for 30 seconds to coat evenly. Add curry powder mix and stir-fry for another 2 minutes, ensuring to coat evenly.
👉 Be careful not to burn curry powder mix.
【4 Simmering 10 minutes】
Add 600ml of water prepared in step【1】 (1200ml for 4 people) and men-tsuyu mix into pan . Add green onions and fried tofu from step 【2】. Once water reaches a boil, reduce heat to low and simmer for 5-6 minutes. Turn off heat, then mix potato starch mixture again prepared in step 【1】, gradually add to pot in circular motion. Mix well until thickened. Once well combined, turn heat back on to low and simmer for 2-3 minutes.👉 Potato starch mixture tends to settle at the bottom after being dissolved in water, be sure to mix it well again just before using.
【5 Boiling Udon Noodles 3 minutes】
While curry broth is simmering in step 【4】, reheat water that was boiled in step 【1】 until it boils again, then add the udon noodles.Once noodles start to naturally loosen, gently separate them using chopsticks or a fork and boil for about 3 minutes. Drain thoroughly boiled udon noodles in strainer.👉 Be patient. Wait for the udon noodles to naturally loosen while boiling. Forcing clumped noodles apart may cause them to break.
👉 If you don't drain the udon noodles well, the soup will quickly lose its consistency.
👉 Be careful to avoid burns.
