[Ingredients]

・ Ground pork
・ Tofu
・ Green onion
・ Garlic
・ Ginger
※  Oil
・ Toban Djan (spicy bean paste)
・ Potato starch
・ Sesame oil
・ Mapo Tofu Mix
※  Water

[Tips]
👉Boiling the tofu helps to remove excess moisture, preventing the finished dish from becoming watery.

👉Right before adding the water-dissolved potato starch, make sure to thoroughly mix the starch settled at the bottom.

👉The spiceness can be adjusted depending on the amount of Toban Djan (spicy bean paste) added.

【1 Boil the Tofu 16 Minutes】

Bring pot of water to a boil, add tofu, and once it comes to a boil again, simmer on low heat for 3 minutes. Drain water in strainer and let it sit for about 15 minutes.

【2 Preparation 3 minutes】

Cut green part of green onion into small pieces, and finely chop remaining part, keeping them separate. Finely chop . Wash and finely chop ginger. Dissolve 2 tablespoons of potato starch l (for 4 servings, 4 tablespoons) in water and set aside. Mix Mapo Tofu Mix with 200ml of water (for 4 servings, 400ml) and set aside.

【3 Stir-frying 3 minutes】

Heat frying pan over medium heat, add oil, and stir-fry finely chopped green onion, garlic, and ginger for 1-2 minutes. When aroma starts to rise, add Toban Djyan and stir-fry for another 1-2 minutes. Add ground pork and stir-fry until color start to change.

【4 Simmering 2分】

Add Mapo Tofu seasoning mixed with water from step 【1】 and bring to a boil. Add tofu drained in step 【1】, tear into bite-sized pieces, and gently mix everything together.

👉You may cut the tofu into cubes instead of tearing it, depending on your preference.

【5 Simmering 5 minutes】

Simmer on low heat for about 3-4 minutes, then turn off heat. Mix potato starch mixture from step 【1】 again and stir it in, ensuring it is evenly distributed. Turn heat back to medium and simmer for 1-2 minutes until it thickens. Turn off heat and drizzle with sesame oil and finely chopped green onion from step 【1】. Lightly mix everything together.

👉 Potato starch mixture tends to settle at the bottom after being dissolved in water, be sure to mix it well again just before using.

【6 Plating 1 minute】

Serve Mapo tofu on dish.

👉 You can also enjoy the dish with a splash of vinegar, if you like.
