・ Spaghetti
・ Ground beef
・ Lotus root
・ Shiitake mushrooms
・ Onion
・ Green onions
・ Shiso leaves
・ Parmesan cheese
・ Special Pasta Sauce

[Tips]
👉 The key to enjoying a perfectly al dente texture, is to slightly undercook the pasta.
👉Adding lotus root provides a crunchy texture to the dish. Cutting it into larger pieces enhances the crunchiness. Adjust the size of lotus root according to your preference.

【1 Preparation 10minutes】

Peel lotus root and finely chop into 1cm pieces. Soak lotus root in bowl of water for about 10 minutes, then drain in strainer and set aside to remove excess water. Finely chop onion. Cut stems of shiitake mushroom vertically. Cut cap into about 5mm pieces. Finely chop green onion. Cut shiso leavesinto strips. Season ground beef with pinch of salt and pepper, and mix well. In bowl, combine special pasta sauce and 125ml of water (250ml for 4 servings), and mix well.

👉Soaking the lotus root in water helps prevent discoloration. This step is optional.

【2 Boiling 15 minutes】

Bring pot of water to boil and add 2 teaspoons of salt (1.5 tablespoons for 4 servings). Add pasta to boiling water and cook for about 10 minutes, then drain.

👉 For 2 servings, use approximately 2 liters of water and about 5-10% of the amount of salt.
👉It is recommended to cook the pasta a little firm.

【3 Stir frying 5 minutes】

While pasta is cooking, heat oil in frying pan over medium heat, then add ground beef from step 【1】to pan. Once beginning to brown, flip and cook until both sides are browned. When ground beef is browned on both sides, loosen with spatula and move to edges, leaving in chunks. Add onions from 【1】 and fry for about 2 minutes. Add drained lotus root and shiitake mushrooms from step【1】, then quickly stir fry everything together.

👉 Browning the ground meat gives it a deeper flavor.
👉 Steps 【3】 and 【4】 should be done while the pasta is cooking.

【4 Simmering 3 minutes】

Pour sauce prepared in step 【1】to pan from step【3】, stirring occasionally, and simmer for about 3 minutes.

【5 Combineing 2 minutes】

Add pasta from step 【2】to pan from step【4】and combine everything together.

【6 Plating 3minutes】

Plate Miso Bolognese from step 【5】 onto dishes and garnish with chopped green onions and shiso leaves prepared in step 【1】. Sprinkle with parmesan cheese.
