Japanese Mushroom Pasta

・ Shiitake mushroom
・ Shimeji mushroom
・ Enoki mushroom
・ Green onion
・ Garlic
・ Butter
※  Salt
・ Spaghetti
・ Japanese seasoning mixture
※  Pepper
・ Shredded seaweed
・ Green Shiso(Green perilla leaf)

👉If mushrooms are dirty, wipe the dirt off with a damp paper towel or cloth. Washing mushrooms will cause it to lose its original flavors.

👉When boiling 2 servings of spaghetti , use 2 liters of water and add 2 teaspoons to 1 tablespoon of salt.

【1 Cutting 5 minutes】

Without washing, cut ends off of shiitake mushrooms and cut into thin slices. Without washing, cut ends off of shimeji mushroms and pull apart with hands. Without washing, cut ends off of enoki mushroms and pull apart with hands. Wash green onion. Cut off ends and thinly slice. Peel and mince garlic. Wash the green shiso and cut into 1-2 mm long pieces.

【2 Boiling 15 minutes】

Boil plenty of water in a pot and add 2 teaspoons of salt(1 and 1/2 tablespoons for 4 servings). Place spaghetti in pot, stir and bring back to a boil. Cook for 10 minutes, stirring occasionally. Drain spaghetti using strainer.

【3 Frying 5 minutes】

While boiling spaghetti in step【2】, prepare mushrooms. Add 1/2 butter to a frying pan and melt. Add garlic from【1】and stir fry over low heat. Once garlic is fragrant, add shiitake mushrooms, shimeji mushrooms, enoki mushrooms, and green onions from 【1】 and stir fry over medium heat.

【4 Stir Frying 5 minutes】

Once all ingredients become tender, add Japanese seasoning mixture, and a pinch of pepper. Simmer 2-3 minutes. When soup has coated ingredients well, add rest of butter and mix. Turn off heat.

【5 Stir Frying 5 minutes】

Add spaghetti from step【2】into frying pan from step【4】, turn on heat. Over medium heat, mix spaghetti and other ingredients.

【6 Plating 2 minutes】

To a plate, add【5】. Sprinkle shredded seaweed and green shiso on top to taste.
