👉 The prep & cook time is an estimation. It will differ based on circumstance.
👉 1 cup (150g) of rice will cook to be about 350g. 300g of rice make about two portions.

[Tips]
👉Wipe dirt off mushrooms with a damp paper towel or cloth. Washing the mushrooms will cause it to lose its original flavor.

👉This omurice recipe is easy to follow. There is no hassle of wrapping eggs around rice. No difficult tricks are needed to make this delicious meal!

Omurice originated in Japan
Omurice is a dish created by the restaurant 'Rengatei' in Ginza, Tokyo. Established in 1893, Rengatei was Japan's first Western-style restaurant. Not only is it the birthplace of omelet rice, it's also where pork cutlets, fried oysters, and hayashi rice were invented.

【1 Preparation 5 minutes】

Rinse and cook 1 cup of rice(2 cups for 4 servings). Cut onion【A】 into thin slices. Without washing, cut ends off of shimeji mushroms and pull apart with hands. Finely chop onion【B】. Without washing, cut mushrooms into thin slices.

【2 Stir frying 5 minutes】

Add Butter【A】 in a small pan and melt. Add onion【A】in the same pan and stir fry until tender. Add shimeji mushrooms and stir fry until cooked. Add TOJ special demi-glace sauce and 60ml water(120ml for 4 servings). Simmer down on low heat.

【3 Stir frying 5 minutes 】

Add butter【B】 in a frying pan and melt on medium heat, add onion【B】in same pan and stir fry until onion becomes translucent. Add mushrooms and stir fry until cooked.

【4 Stir frying 5 minutes】

Add 300g of cooked rice (2 portions) (4 portions for 4 servings)and chicken bouillon into pan from step【3】, stir fry on medium heat. Serve half of the mixed rice on 2 plates. (4 plates for 4 servings)
(Butter rice)

【5 Frying 5 minutes 】

Clean the frying pan and add 1/2 butter【C】(1/4 for 4 servings) to melt on medium heat. Mix 2 cracked eggs【C】 (for 1 serving) and 1/2 pack of mayonnaise in a bowl. Pour 2/3 of beaten egg mixture into the frying pan and stir with a circular motion. When edges brown, pour remaining 1/3 of beaten egg, and cook over medium heat until it becomes half cooked.

【6 Plating 5 minutes】

Slide fluffy eggs from step【5】on top of butter rice from step【4】 . (Omurice) Repeat to make another portion. (For 4 servings, make 3 more)Pour demi-glace-sauce from step【2】on top. Sprinkle parsley on demi-glace-sauce to taste.
