[Tips]
👉When boiling chicken tenders, adding an extra step will make them moist and flavorful. We recommend boiling water with a piece of crushed ginger and about 1 tablespoon of sake, then boil the chicken tender.
👉Quickly transfer boiled noodles to a colander, rinse with water to cool down, then wash thoroughly under running water for even better taste.
👉Drain water from the boiled noodles thoroughly to avoid diluting the taste of the final result.

【1 Boiling 5 minutes】
Over medium heat add about 600ml of water, enough to cover chicken tenders, and 1/2 teaspoon of salt to pot. Once it boils, add chicken tenders and bring back to a boil over medium heat. As soon as it starts to boil again, turn off heat and cover pot with lid. After about 10 minutes, take out chicken tenders. Once they have cooled down slightly, remove any tendons and shred into bite-sized pieces by hand.【2 Preparation 3 minutes】
Cut both ends of cucumber and slice it diagonally into thin slices about 3mm thick. Stack slices slightly offset then slice them into thin strips about 3mm wide. Slice green onion diagonally into thin pieces (about 1-2mm thick). Cut off stems of shiso, roll them up vertically, and slice into thin strips.【3 Boiling Somen Noodles 8 minutes】
Bring 2 liters of water (4 liters for 4 servings) to boil in large pot. Scatter somen noodles into water, boil them on high heat for about 2 minutes. When water starts to boil, adjust heat to prevent it from boiling over. Once noodles are cooked transfer them to strainer. Thoroughly rinse under running water to remove sliminess, then drain water.👉 Be careful not to burn yourself; watch out for hot water and boiling over.
