・ Special Shio Koji Marinated Chicken Thigh
・ Potato starch

[Tips]
👉Coating helps to seal in the juices of the meat, so evenly coat the chicken thighs with cornstarch. Make sure to shake off any excess cornstarch. By ensuring an even coating of cornstarch, you'll achieve a crispy, light texture. Excess cornstarch can absorb oil and result in an undesirable texture, so aim for uniform coverage.

👉Salt koji is a seasoning made by fermenting a mixture of rice koji, salt, and water. The enzymes present in salt koji enhance the flavor by adding richness and depth, and they also have the effect of tenderizing the meat

【1 Preparation 5 minutes】

Spread potato starch> on a tray. Remove chicken from bag and cut into bite-sized pieces.

【2 Preparation 5 minutes】

Coat chicken pieces from step 【1】evenly in potato starch.Tap gently to remove excess starch.

【3 Pan-frying 112 minutes】

Add around 1 to 1.5 cm of oil to frying pan. Bring oil to 320F-340F then add chicken pieces one by one. Fry for about 3 minutes, being careful not to burn. Turn them over and fry for an additional 3 minutes on each side until golden brown. Increase heat and fry for another 1 to 2 minutes, while stirring.

👉 Salted koji burns easily, so fry it at a low temperature.

【4  Drain Oil 5 minutes】

Remove chicken from pan and drain excess oil thoroughly. Let sit for 2-3 minutes.

👉 To drain the oil, we recommend using a Crisper tray or kitchen paper.

【5 Plating 3 minutes】

Plate chicken from Step【4】onto plate.

👉 You can also squeeze some lemon or lime juice over the chicken for extra flavor, if desired.
